Packing a healthy lunch…
During june i work very long hours. I am out the house at 7am and don’t return home until 9:30 pm.
This means i eat two out of three meals at work. Sometimes (as a single lady) it is hard for me to plan two meals to pack with me. As a result i often buy one meal at the food place at my work. When i can i freeze leftovers, but sometimes you just want something fresh. Especially when you feel like you are being very inactive with your days.
Here is my recipe for a packable salad that is filling and healthy:
Put a  few handfuls of taco chips in baggie.
In large container add salad greens, one chopped tomato, half an avocado (chopped), handful of shredded jack cheese.
In mixing bowl combine: 1/4 cup lime juice 1/4 cup ev olive oil 1/8 cup chopped cilantro 4 pinches of good salt 2 chopped green onions 2 tbsp finely minced red onion (i use freeze dried) 1 15 oz can black beans drained and rinsed 1 small can corn drained
Mix thoroughly. Spoon out mixture into smaller container. Save the rest for the next three days!
Once at work add your small container to the large one. Crush the chips and dump the bag into large container. Shake up your salad and devour!
